How granular should my shopify collections pages be for SEO and PPC?

I sell a high-end product for a rather niche hobby. I'd rather not say the exact product, but for example's sake, let's say they are high performance hats specifically for mountain climbers. If you don't actively climb mountains, you would never consider buying these hats apart from maybe a gift to somebody that climbs.

There is no sizing (i.e. one size fits all), but there are four different materials (Wool, Cotton, Carbon Fiber, Alpaca), and 4 different fabric thicknesses (thin, medium, thick, and chonky).

When people come to my website, it's an even split if they are searching for the fabric first to later decide on the thickness, or if they have a particular thickness in mind first to later choose the fabric. I currently have 8 different collection pages each representing a fabric or thickness. Once going to a collection page, you can filter down to more specific, or click a link to a collection with a filter preset. For example,

I choose Shop by Material ---> Wool. Then when on the wool collection page, I can choose to show only 'chonky' options

or

I choose Shop by Thickness ---> Chonky. Then when on the chonky collection page, I can choose to show only 'cotton' options.

I hope that makes sense. For the question, would it make sense for me to expand to 16 collections and make a collections page for each of the possible combinations? (e.g. wool thin, wool medium, wool thick, etc)

Especially for a few combinations, it would nail long tail keyword searches that still have decent volume and make for more relevant landing pages for PPC. Increasing conversions there could make a big impact on my business. For most other keyword combinations, search volume would be quite low, e.g 10-100 or maybe 1k searches per month.

On the other hand, would I be spreading myself too thin in some way and it would be better to have more products on a landing page with a filter? For example, if my collection is as narrow as 'carbon fiber chonky mountain climbing hats' might I miss out on search traffic for 'carbon fiber' or 'chonky' alone, especially in a niche market? I currently rank rather high for some of these terms as is, but for the most popular fiber/searches I'm quite low.

I feel like I either need to choose one or the other, or else there will be a lot of duplicate info and products in multiple collections. Would this actually be a problem for SEO?

HTTP-HTTPS redirects: domain level or each URL?

Googling for answers seems to give conflicting answers here. We have a domain that has been HTTP but some individual URLs have been HTTPS (like form pages). We are about to deploy HTTPS redirect on the server to get everything going to https://www.domain.com . Do we have to go to the effort of a big 301 redirect list of all page-level URLs without Google dropping our earned page rank? One website, two properties (domains)

I wasn't sure how to frame that title so let me explain; Due to error on my part, I have ended up with, a www.xyz.com , version of my website, and one that's just xyz.com. Now I'm tracking my traffic differently on GSC and GA. I'm not sure how to feel about this. Is there anyone with a similar situation? Should I just go on like usual or are there things I need to start doing differently?
